"Our version of kibbeh naya. One of the few dishes that has stayed on the menu since we opened. This dish is inspired by Anthony Boutard of Ayer's Creek Farm. He asked me to do a kibbeh naya using his parched green wheat instead of the traditional bulgur wheat. He has influenced this restaurant not only by the great crops he grows, but also by his approach to food. My cuisine will forever be influenced by him. Thank you Anthony and Carol. gheurl"
