Shoyu ramen

Expert Recommendations

"This 28-seat neighborhood Japanese noodle shop opens at 11:30 am, and if you aren’t at the front door by 11:15, you may have to patiently wait for the first round of diners to finish. With only four broths to choose from, keeping it simple is exactly what they do here. My all-time favorite is the shoyu ramen made with a chicken and vegetable stock and topped with roasted pork, soy sauce, bamboo shoots, and green onions. Adding a soft-boiled egg for extra texture makes this a weekly necessity."
"What I love about this place is that you can see the chefs making the ramen in the back. There are two guys doing it—one preparing the meat, the other one prepping the soup—and they make you feel like you're having the best street food ever. All of the ramen are different and delicious, but I order it with shoyu broth. They are also open late, which is great for me since most restaurants are closed by the time I get out of work."
