Prepare yourself and your dining companion, as you will have an out-of-body experience when you eat this. The dish is made with fingerling potatoes marinated in minced shallots and olive oil, with black truffles, foie gras curls, sherry vinaigrette, Parmesan, radishes, and arugula.
