"In Texas, you must pick your barbecue joint. I understand this, I accept this, and I am loyal to Hard Eight. I fell in love with the original out in Brady, joyfully took trips to nearby Stephenville, and am ecstatic that they have put two outposts in the DFW area (Roanoke and Coppell). The pork chop is my favorite. It’s moist and tender with just the right amount of smoke—and, yes, I gnaw at the bone. I also love the cornbread salad with the fresh green onions and, of course, the barbecue sauce."
