"At first bite, I realized these guys were onto something. There's nothing like pizza cooked in a wood-burning oven. It has a great, flavorful crust with an ethereal element of smoke. My favorite is the Pizza Pugliese, coupled with burrata and mortadella—genius. When the pizza cooks and the sauces caramelize onto the crust on a stone heated by natural wood, the fat of the burrata easily absorbs the flavor while the fat in the mortadella begins to melt, giving the pie a wonderful porky flavor."
