Pastry work isn’t for everyone, and pastry work at the highest levels requires an attention to detail that would make an air traffic controller envious. And yet Geo Salas has made her career at the highest peaks of the pastry world; A 10 and Table 52 in Chicago, and Castagna in Portland. Recently, she moved back to Chicago to helm the pastry program at Michelin-rated Smythe. All of that time in the kitchen means she likes to unwind with pizza and a bourbon at Cleo’s. 

 

 

“It’s a bar near my apartment and they call it a whiskey wonderland, and that's what I drink. (laughs)"

When to go:

“They're open really late and serve crazy bar food that's really cheap. So you can get a late-night pizza and A LOT of whiskey. It's where I go after work. I don’t really live near any restaurants, so it feels like my own personal industry bar. Then I can stumble home full of pizza.”

What to order:

“I'm a purist when it comes to pizza. I usually just go for pepperoni. Or sausage and onions.”

What the vibe is:

“It's a dive-ass bar. And it can get a little weird with it being a 4am bar, because of all the people that head over there when the 2am bars close. It's a place I like to go to and usually dip from at 2am.”
