Chef Greg Collier (of Leah & Louise and Uptown Yolk in Charlotte, North Carolina) uses creamy caramelized onions and roasted apples to lend sweetness to Jimmy Dean® Country Mild Sausage in this hearty and spicy sweet potato casserole.

ounces Jimmy Dean® Premium Pork Country Mild Sausage

pounds sweet potatoes, peeled and cut in 1-inch chunks

tablespoons olive oil, divided

 

teaspoons red pepper flakes, divided

teaspoons kosher salt, divided

tablespoons unsalted butter

large onions, thinly sliced

large apples, cut into 1-inch chunks

STEP 1.

Preheat oven to 400ºF. Line a rimmed baking sheet with aluminum foil if desired. Place sweet potatoes on the baking sheet. Drizzle with 2 tablespoons of olive oil, season with 1 teaspoon of red pepper flakes, 1 1/2 teaspoons of kosher salt, and 1/4 teaspoon black pepper, and toss with your hands to evenly coat. Spread into an even layer. Roast 30 to 40 minutes until fork tender.

 

STEP 2.

Meanwhile, caramelize the onions. Place 1 tablespoon of olive oil and 4 tablespoons butter in a large frying pan. Place onions on top of butter and cook on medium heat until butter melts. Add 1 teaspoon of kosher salt and cook on medium-low, stirring often, about 40 minutes until caramelized and dark brown. Remove the pan from the heat.

 

STEP 3.

When sweet potatoes are ready, transfer to a large bowl. Place apples on the now-empty baking sheet, drizzle with remaining 2 tablespoons olive oil, and season with remaining 1/2 teaspoon red pepper flakes, 1/2 teaspoon kosher salt, and a few grinds black pepper. Toass to combine and spread into an even layer. Roast 20 minutes until just fork tender.

 

STEP 4.

Transfer apples to bowl with sweet potato. Add caramelized onions. Cook the Jimmy Dean® Premium Pork Country Mild sausage in the same frying pan over medium heat, stirring frequently, 8 to 10 minutes until browned and cooked through.

 
 

STEP 5.

Drain the sausage and add to the bowl of apples and sweet potatoes and mix to combine. Transfer to a 9x13-inch baking dish. Reduce oven temperature to 375ºF and bake 15 minutes or until heated through.
