Top Ten—Genevieve Gergis, Bestia, LA

She gets us.

October 5, 2015

Bestia is undisputedly badass. One half of Team Awesome (that'd be Genevieve Gergis and Ori Menashe) let us in on her top ten trappings of the good life. If you don't nod soulfully and mutter "YES," after each one, we don't know you anymore.

1. Dark maple syrup.

It is such a rich and complex sugar underutilized by the higher-end restaurant-world sweetener. I use it in a ganache for my fritters, in ice creams and even in my morning tea. I might get my bartenders to come up with a cocktail for me using the syrup.

2. All Tom Waits.

When I listen to “Chocolate Jesus” I feel as though he wrote it for me.

3. The smell of rain.

I am hoping for a rainy winter. It just calms me down and refreshes my olfactory palate.

4. Vanessa Seward

She is a fashion designer who collaborated with the owners of APC. I wish I could buy her whole collection.

5. Banning all heels and underwire bras.

Do I really need to explain why?

6. My husband's homemade prosciutto.

It is aged as old as our daughter, 17 months. I remember being so exhausted and hormonally crazy when he made it, I could not have cared less. I care now, believe me.

7. The Wet Hot American Summer revival on Netflix.

The humor is so out there you almost don’t want to watch it.

8. Santa Maria Novella

I love the idea of smelling like an Italian woman circa 1890.

9. Spin Pins.

It is an amazing invention for all women chefs with long hair. You put your hair in a bun, spin them in, and your hair does not budge even a bit all day.

10. My daughter's funny kisses.

She just learned to sort of kiss. It’s more like her planting a wet smile on my cheek, then her laughing hysterically.

BONUS!

11. The color translucent turquoise.

It is a happy, soothing and beautiful color all at the same time.
