Bio

Jessica Koslow is the chef/owner of Sqirl Kitchen. She grew up in Long Beach, California, the only child of a single mother. The time they had together in the evenings to cook or at least eat together was important—and as it turns out, formative and fortuitous.

"We've been working toward an iconic (in look and taste) California bagel for @tellosangeles and it's coming together. Its form is a pull-a-part bagel ('Krakover Beyglach'/Obwarzanki ) similar to the twisted version seen in Poland...this one with a sesame/nigella seed mix. It cuts in half without splintering so perfect for schmears. The quick boil is more in Montreal Style (malt syrup though) and we're using a California Charcoal wholewheat flour from @gristandtoll with delicious results. Still not there, always toiling, but move in the right direction."
