"We've been working toward an iconic (in look and taste) California bagel for @tellosangeles and it's coming together. Its form is a pull-a-part bagel ('Krakover Beyglach'/Obwarzanki ) similar to the twisted version seen in Poland...this one with a sesame/nigella seed mix. It cuts in half without splintering so perfect for schmears. The quick boil is more in Montreal Style (malt syrup though) and we're using a California Charcoal wholewheat flour from @gristandtoll with delicious results. Still not there, always toiling, but move in the right direction."
