"Such a great night with @quaker and @beardfoundation talking about minimizing food waste in our industry. Pictured is Day Boat Red Snapper dressed in an amino sauce of egg whites, the byproduct of yolks we need for our pasta, which we inoculate with koji and toasted oats and age for 9 months. The vegetables were buried in an oat nuka as well, textural and delicious.
