Bio

Chef Tracy is the pastry chef/owner of Rockaway Beach Bakery. She never intended to work in a kitchen, or in pastry, for that matter. In 2004, as a new alumna of Pratt Institute with a bachelor of fine arts in illustration, she could have stayed out of the kitchen—if it wasn’t for her grandmother’s dessert recipes. In the midst of casually experimenting with them, she was surprised to discover a zeal for pastry.

"Ok so I totally slacked on my last post of the #pastrychefchallenge Finally here's "day 7" of #7daychallenge Almond Joy Ice Cream Cake: Coconut ice cream cake with candied almonds, coconut meringues, passion fruit curd and warm @valrhonausa bittersweet chocolate sauce poured table side. This dessert was nicely mentioned in a NYT review ("Change is good...") so it stays special to me and it was just damn delicious. If it wasn't for my awesome pastry team at North End Grill, I wouldn't have been able to make this or any of my wacky delicious ideas a reality. I was on vacation when Pete Wells came in and had the desserts that were mentioned in the review. I didn't lay an eye or hand on anything in my department 10 days before his final visit. He only had good things to say. Talk about holding down the fort! Thank you ladies always 💗 So thank you @mercurybrian and @verysmallanna for the #pastrychallenge nomination!
