"Iberico pigs are fattened with Bellota, aka acorns. These babies help increase the fat content and make this ham one of the most delicious I've ever had. At Delicias, they bring the quality and authenticity just like when I've been to Spain. The resulting meat is swirled with high levels of flavorful natural fats, for which this pig has gained international notoriety. The shoulder is the queen of hams. It's cured for approximately 30 months."
