Chef Royden Ellamar reviews La truffe noire at Joël Robuchon
$$$$ | French/Belgian
The Strip
"This is sublime cooking. No one knows how to coax out flavors and control them like Robuchon. What is essentially a truffle potato salad is transformed into world treasure. Prepare yourself and your dining companion, as you will have an out-of-body experience when you eat this. The dish is made with fingerling potatoes marinated in minced shallots and olive oil, with black truffles, foie gras curls, sherry vinaigrette, Parmesan, radishes, and arugula. It's soon to be back with white truffles!"
Chef Saipin Chutima reviews Sixteen-course degustation menu at Joël Robuchon
$$$$ | French/Belgian
The Strip
"The experience at Joël Robuchon in the MGM was one of my memorable dinners. Each dish made was with perfection, including artistic, hand-painted plates. Every one of 16 courses served had its own special characteristics and features that left you speechless. One of my favorites was Le Soja, which was a risotto of soybean sprouts, lime, and chives. Another one was the caviar dish served on fennel cream. If you’re in the mood to splurge, this is definitely the one place you must try!"
