"Making ricotta: This is a really fun and satisfying recipe to make. It’s for basic mise that can be used for anything. Keep in your fridge for a week. 1L of milk 1/2 cup lemon juice Big pinch salt Bring the milk and salt to 120f and pour in lemon juice, stir and watch it split. It is accomplishing to watch. Let sit for 20min and strain through a strainer with a clean cloth or coffee filter overnight. "Main course for the #thriller inspired dinner by @vancouverchefs. This dish is inspired by the "Beat it" video circa 1983. The sheen on the short rib represents Micheal Jackson's Jerry curl. There's red and yellow beets, on either side as they two ring leaders face off in a knife fight. the black jacket guy (radish coated in burnt onion) and the white jacket with a red dragon on his back (the turned radish with the red strip). As they clasp arms and choreograph one of the most epic dance scenes known to man, the shallot and soy soffritto show as the amount of rhinestones and bedazzled jackets are in the video. #inspiration"
