Pig & Pickled represents an opportunity for Chef/Owner Ryan Lewis to return to his roots, a native of Bethalto, IL (thirty minutes from St.Louis), he returns to the area he grew up in after eight years in Springfield, IL and several more elsewhere. His philosophy of using local product and focusing on creating a welcoming environment, while taking familiar dishes and transforming them into something a little different keeps his food both approachable and interesting at the same time.
