"Shout out to @laurashoots for these incredible photographs. The Danzi or Dan Tsu mian is a meaningful dish to us. The bowl of noodles is a little larger here than its source of inspiration in Tainan, but true to its slack season roots — fisherman started peddling dan dan or danzi mian during typhoon season when it was too dangerous to fish, sparingly garnishing each bowl with a single shrimp. We also augment the @heritagefoodusa pork sauce with equal parts shrimp and fortify the superior broth with shrimp shells and dried dried shrimp. 🦐 🦐 🦐"
