"Madai. Wild caught Japanese Seabream. Wild madai are leaner than farmed ones, but they have amazing texture and better flavor (also 2x the cost). I’m happy to hear more guests appreciate the nuances of all the different fish throughout omakase. Fatty fish are undoubtedly delicious, but we serve a large variety to explore different textures and more subtle flavors 💫"
