About Ariel Arce

This born-and-bred New Yorker has taken on the mantle as “Champion of Champagne.” Her impressive résumé includes stints at Chicago cocktail mecca The Office at The Aviary, as well as Pops for Champagne. In New York City, she’s worked at Artisanal and served as wine director at Birds & Bubbles. More recently, Arce worked with bar impresario Ravi DeRossi to create the Champagne bar Riddling Widow. In July, it transformed into Air’s Champagne Parlor, with Arce.

"These unforgettable clams. Escabeche style wrapped in coconut milk, red curry, ginger, garlic - the lightest touch - perfect with accompanying champagne last night at the wonderful new @airschampagne parlor in Greenwich Village (love a parlor). I can't get them off my mind. I really can't. Celebrating a successful balls-to-the-wall two days in NYC - we don't have a shop here, but man, this city comes out for our ice cream in a big way. Almost feels like home every time I come back."
