Apple and endive salad


"A classic salad, perfectly executed every time. Julienned apple, toasted walnut, bleu cheese, and endive. I love that they shake almost all of the papery skin off the walnuts, so they're never bitter. Anton was my chef de cusine at Peristyle and taught me this trick. A very thoughtful dish, just like all the others on his menu."
