"This is sort of the starting point for jambalaya. A lot of places do jambalaya that is a mild-flavored, tomato-y rice dish for tourists, but Coop's makes it really flavorful. They put rabbit, crawfish, shrimp, and tasso in it to give it a really deep flavor. For all the times that I have been in there, as well as the number of people that have tried it, the jam has always been well-seasoned and great."
