Baked eggs in brioche

"This is my favorite breakfast in the city. It is a big brioche boule with a big hole, hollowed out and lined with ham. There are a couple of poached eggs served with Gruyère in there, all of which is baked. What I love about it is that when you break the egg, the yolk naturally absorbs into the bread. You always want to eat eggs with toast, but with this dish, you don't have to dip your toast into the runny egg yolk because it is already there."
