"This is the Rolls-Royce of all risottos, starting with the rice. They use acquerello rice, which is the best rice for risotto, and cook each risotto to order, which makes a huge difference. The rice pops in your mouth and is perfectly creamy without being too soupy. They also use Vacche Rosse cheese, which is a type of Parmesan cheese that comes from a red-coated cow (very rarely seen in Miami), as well as nothing else but white truffles from Alba. It's just perfection on a plate."
