Callos a la Madrileña


"There are so many tapas-style appetizers to choose from, and everything is well-priced. My favorite here is a bowl of the callos a la Madrileña, or Madrid-style tripe, and a well-chilled Amontillado sherry. They slow-cook honeycomb tripe with pimento and add blood sausage at the last minute to give it a boost of funk."
