The octopus is tender yet chewy, which is the benchmark of well-cooked octopus. It is served differently as the seasons and produce change, but one thing remains constant: the properly cooked and seasoned octopus. The vinaigrette is another magical Batali creation, combining the great, vibrant flavors of limoncello and turning it into a vinaigrette."
