"This is a formidable and lovingly cooked piece of pork. It's juicy and brawny with a huge bone to pick up and gnaw (if that's your thing). During the winter, the kale gratin is all decadence when the cream turns crusty and crisp after being slowly roasted. Little sparks here and there from the sweet, pickled raisins. Delight!"
